Lamington Recipe 🍫🥥

• 📦 Makes: 16 squares
• ⏱️ Total time: 2 hours (includes cooling)
• 🥄 Ingredients:
  • Sponge: 4 eggs, 3/4 cup caster sugar, 1 cup self-raising flour, 2 tbsp cornflour, 1/4 cup boiling water, 1 tsp vanilla
  • Chocolate icing: 4 cups icing sugar, 1/2 cup cocoa powder, 15g butter (melted), 1/2 cup boiling water
  • Coating: 3 cups desiccated coconut
• 👨‍🍳 Method:
  1. Beat eggs and sugar until thick and pale (5 mins)
  2. Fold in sifted flours, then add boiling water and vanilla
  3. Bake at 180°C for 25 mins in a lined 20cm square tin
  4. Cool completely, then refrigerate overnight (makes dipping easier)
  5. Cut into 16 squares
  6. Mix icing ingredients until smooth
  7. Dip each square in chocolate icing using two forks
  8. Roll in coconut, place on wire rack to set
• ☕ Serve with: A flat white or long black — proper Aussie style
