You are using "start": "2025-01-01" filter that's why you cannot get any result before that date. Please check your INPUT carefully. We are directly sending it to Twitter and show you what it returns so we don't have any control over this.

Another reason can be because you are using "sort": "Top". Twitter mostly returns very few results when you are using this sort. Please switch to "sort": "Latest" and try again.
As I mentioned, we don't have any control on the data you receive, you receive all the tweets Twitter gets back to us.
